I am still getting the hang of Voyager, so this is a simple question. What are the settings to run unguided in an On The fly script? In the Guiding/Dithering tab, if I uncheck the box Exposure/Binning in the Guiding selection, will that do it?

Yes.
You might want to check the bottom “Realign to target” in case it drifts too much unguided.

Thanks for the verification. 
Box your refer is for “Guiding”, “Exposure/binning” label is for time in seconds and binning index on the right.
On the same row of the “Guiding” there are “Calibrate Guide”, “Star Lost Detection”, “Dithering”,“Realign Target”
